My husband and I recently dined at Cook St. Helena (north of Napa), a locals hangout that features mainly Italian fare – totally delicious! We enjoyed an appetizer of house made mozzarella, heirloom tomatoes, balsamic vinegar, extra-virgin olive oil and basil (high quality ingredients being key here)! I made it at home this weekend in only a few minutes, using store bought fresh mozzarella. So little effort required for such a gourmet appetizer/side, you can make for a few as well as a crowd.


Good quality aged balsamic vinegar and extra-virgin olive oil – fresh basil and fresh mozzarella. Organic heirloom tomatoes have superior complex flavors.


Like a 5-minute masterpiece – you’ll know what I mean after you taste it!


Caprese Appetizer

Serves 2-4

 1/2  teaspoon aged balsamic vinegar

1  teaspoon extra-virgin olive oil

1/4  pound mozzarella cheese, cut into quarters

1/3  pound heirloom tomatoes, halved or quartered

1-2  thinly sliced fresh basil leaves

Drizzle the balsamic and olive oil on a serving plate. Arrange the mozzarella and tomatoes on the plate. Sprinkle with basil chiffonade and serve.
